When we combine the two, we arrive at a prehistoric wilderness where we eat and play and love like savages, abandoned to our senses. In this hands on-class with America’s foremost salt expert and James Beard winning author Mark Bitterman, you’ll learn the fundamentals of salt-block cooking. Highlights include learning to make the best pizza outside of Palermo on 15 pound salt blocks dropped into hot coals; sizzling edamame with shiso and sesame for a snack that will outshine Hiro’s sushi; and whipping up a batch of salty-smoky walnut-chocolate-chunk cookies to rival any grandmother’s.
